We seem to only have pancakes when we are Glamping. This is one of our favorite pancakes, they are not to sweet, and the apples and cinnamon taste so good!
Ingredients:
1 Tablespoon of butter, melted
1 egg
1 Cup milk
1 medium/large apple grated
1/4 Cup sliced almonds
1-1/4 Cups all-purpose flour
1-1/4 teaspoons baking powder
1 Teaspoon (or more) cinnamon or pumpkin spice
1 Tablespoon white sugar
Instructions:
In a large bowl, combine butter, egg, milk and grated apple. In a separate bowl, sift together flour, baking powder, cinnamon/pumpkin spice and sugar. Stir flour and apple mixture together, batter can be lumpy.
*We like to prep our food before heading out on a Glamping trip. We recommend mixing all of the dry ingredients together and keeping them in a jar. Once you are ready to make the pancakes, add the dry ingredients to the freshly mixed apple mixture.
1/4 Cup scoop of batter makes about one dozen pancakes.
We use indirect heat to melt the butter on the stove top.
Let the batter stand for a few minutes, it seems to make a lighter batter that way.
Using the 1/4 Cup measuring cup makes a nice sized pancake.
The large griddle lets us brown sausages, too.
A bit of butter and maple syrup make this a wonderful breakfast.
OK, now I’m hungry! The recipe looks great and I’ll try it – sans sugar. I don’t use it but one of the chefs I talked with in Chicago mentioned using apple as a substitute. I’ll let you know how it turns out. Hope you both are doing well. Thanks for sharing.

Greetings, Richard! If you try the pancakes with apple sauce (I think it is apple sauce that you would use) let me know how it turns out. You can also add the shredded apples to pre-mixed pancake mix– it is the easiest way to make them.
